I see you have a caching plugin installed, have you tried clearing the caches yet or better yet disabling caching during development as you don’t want to have that installed at the same time.
In addition, that background you were changing looked like the container background, rather than the menu background and because you only have the menu on and aren’t using the title, additional content or search options you can’t see the container background.
In regards the menu not hiding, I have tried going to savetherapy.com as per your video but that site is not loading for me so I can’t really advise on the menu.
In regards video documentation, I would love to do that but unfortunately maintaing video documentation is extremely time consuming and expensive and doesn’t really answer many of the questions you are having if they are related to caching.
I would need a dedicated person to do documentation if I went down the video route and I don’t make enough from the plugin for it to be my main job so can’t justify that unfortunately.
I do agree though that some things are easier via video and it has been on my list for a long time to look at implementing.
